Dinner’s Ready:  Lauren and Kevin Rass Homemade Alfredo Sauce

by

Fall is here, and many of us get excited to try warm and savory dishes pleasing to the palate. Towards the end of the year, life moves at rapid speed. It seems to be the nature of the season as we gear up for the holidays. With the days becoming shorter, everything changes- -including our appetites. We start to crave those cozy, comfort meals that are good for the soul.

Pike Road couple Lauren and Kevin Rass share one of their favorite cool weather meals with us this month. Lauren is a pharmacist at the Montgomery VA office, and Kevin works in Environmental Science at Alabama Power. The couple has been married for 13 years and has two daughters, MacKenzie (7) and Olivia (4). As any parent can relate, having young children keeps you busy with school in full swing, plus after-school activities, etc. So it’s nice to create a meal that brings joy as you make it, and the entire family enjoys eating.

While Lauren loves to cook and prepare meals with love for her family, Kevin loves to grill. He started grilling on a mini Weber charcoal grill in college and now has a couple of pellet smokers. He has refined his grilling with a lot of experimentation and using recipes he finds online. Lauren shares, “We have watched every Food Network cooking/ grilling show. Some of Kevin’s specialties include ribs, smoked queso, brisket, and pork belly burnt ends.” Although cooking is a hobby for the Rass couple, they hope to one day attend a BBQ competition circuit for fun.

While they both grew up helping their parents cook, Kevin is the chef in the house. His mom always cooked for the family and church functions. When he was ten, his mom required each of his siblings to plan and help cook one meal a night. It seems their oldest is following in Kevin’s footsteps around the kitchen. MacKenzie is interested in cooking and can already tell when mashed potatoes need more salt.

Pasta is one of those perfect meals for easy preparation and leftovers. “Our girls love any pasta, whether macaroni and cheese, buttered noodles, or our homemade Alfredo.” Then, of course, they add grilled meat for the protein, and the girls gobble it up!

Lauren explains, “Kevin cooked Chicken Fettuccine Alfredo for our first date, and it has been a staple in our house since, both for sentimentality and delicious flavor. However, now it is a bit fancier than Alfredo from a jar.”
